California Pizza Kitchen is OK

While my younger brother seems to be fine with whatever frozen pizza we pick up from the store, I'm not. The only ones that I have even remotely been able to tolerate are the California Pizza Kitchen brand ones, and those are just OK. Certainly, I'm not going to be drooling over them.

Luckily, I have collected two very quick and easy recipes which provide an alternative to frozen pizzas!

Minipizzas

I learned how to make these in "Family and Consumer Sciences" (essentially home ec.) when I was in 6th grade. It's probably the most useful thing I ever learned in the public school system. The prep time is maybe 5-10 minutes, and there's an additional 5-15 minutes in the oven. It's really easy to do.

Ingredients:

  • Pizza Sauce
  • Mozzarella Cheese (Shredded)
  • Pillsbury Flaky Layers Biscuits
  • Any additional toppings you may want (bell pepper, onion, olive, pepperoni, etc.)

1. Preheat the oven to 400°F. Get one biscuit at a time and peel away each of the layers, carefully, and lay each one about one inch apart on a (greased) baking sheet. You might have enough that you need more than one baking sheet.

2. Spoon out your pizza sauce on to each of the biscuit layers you've laid out.

3. Sprinkle cheese and other ingredients on the biscuit layers.

4. Bake for 5-15 minutes. I reccomend just checking literally every 5 minutes your first time so you can get a better idea of how long it takes in your oven. When it's ready, the cheese should be melted and your the biscuit part should be golden brown.

5. Enjoy! Mmm... so much better than frozen pizza.

Italian Eggplant Pizza?

I have one last thing. This is an Italian recipe which is a lot like pizza, except it uses eggplant instead of a pizza crust.

Ingredients:

  • 1 lg. eggplant, peeled
  • 1/2 stick melted margarine
  • Seasoned Italian bread crumb
  • Spaghetti sauce, about 16 oz.
  • Sliced Mozzarella cheese, 8 oz.
  • Oregano

1. Slice eggplant into 1/3 to 1/2 inch thick slices (cut crosswise).

2. Dip slices in margarine and then bread crumbs.

3. Sprinkle slices with oregano if desired.

4. Spoon spaghetti sauce on top of each slice.

5. Top eggplant with a slice of cheese.

6. Place eggplant in a 400 degree oven for about 15-20 minutes or until cheese is slightly brown.
